The sparkling wine Lambrusco “I Calanchi” is a vivid expression of a typical product that originates from the Colli di Parma. Here, Lambrusco Maestri is one of the reference grape varieties, and the Monte delle Vigne winery vinifies it with respect and deference, creating a label with personality, well-suited for both a full meal and during the aperitif hour, where the cured meats of Emilian tradition represent the most fitting pairing. Direct, straightforward, and cheerful, “I Calanchi” is a pleasant surprise that deserves more than one tasting, as evidenced by the interesting recognitions it has received at the national level. 

The Lambrusco “I Calanchi” originates from a careful selection of Lambrusco Maestri, a grape variety that the Monte delle Vigne winery cultivates within its hillside vineyards located at an average height of 200 meters above sea level. The vines, trained with the guyot method, are about 20 years old, and their roots sink into a subsoil rich in clay and limestone. The must ferments in stainless steel containers, at a controlled temperature that never exceeds 25 degrees, remaining to macerate on the skins for 20 days. The sparkling process occurs following the production principles of the Martinotti Method.

The “Calanchi” is a Lambrusco that develops in the glass with a typically ruby color, crossed by more violet reflections, especially evident at the rim. The nose is bursting with fruity and winey notes, from which a clear reference to sour cherry and berries emerges. On the palate, it is light-bodied, with a dry sip, denoting a lively and smooth character, perfect for fostering a convivial drink. A label from Monte delle Vigne that pairs well with typical dishes of regional cuisine, such as zampone, cotechino, and salama da sugo.
