Le Difese is a full-bodied red wine with a Bordeaux style but a Tuscan soul: a blend of Cabernet Sauvignon and Sangiovese, aged in barriques for 12 months. It is soft, round, elegant, and velvety, animated by a balanced freshness and hints of cherries, chocolate, aromatic herbs, and sweet spices!
The renowned Tuscan winery Tenuta San Guido introduces the red wine ‘Le Difese’, a blend of Cabernet Sauvignon and Sangiovese that highlights pleasantness and versatility as its main traits. This label, launched with the 2002 vintage, takes its name from the term used to refer to the teeth of the wild boar and represents an exceptional blend of Tuscan Mediterranean character and French style.
‘Le Difese’ by Tenuta San Guido is born from a blend of Cabernet Sauvignon and Sangiovese, varieties cultivated in soils with varied morphological characteristics, partially clayey and with a general abundant presence of limestone, galestro, and stones. The rows, located between 100 and 300 meters above sea level, enjoy excellent exposure to the south and southwest, and the harvest is carried out manually with careful selection of the bunches, starting with Cabernet Sauvignon and concluding with Sangiovese. In the winery, after a second selection, the grapes undergo gentle destemming, followed by alcoholic fermentation at controlled temperature in steel tanks.inox, with 14-18 days of maceration on the skins and complete malolactic fermentation. The subsequent aging period of almost a year takes place in French oak barriques previously used for the maturation of ‘Sassicaia’ and ‘Guidalberto’.
The Supertuscan ‘Le Difese’ Tenuta San Guido is of intense ruby red color. The nose offers fruity hints of blackberry and cherry that blend with notes of chocolate and aromatic herbs. Round, full, and fresh on the palate, with a sweet tannic texture and a fine savory finish. This is a Tuscan red wine of great versatility, suitable for pairing with platters of cured meats and particularly aged cheeses as well as with first and second courses based on various meats.
