Merlot Paraschos 2019

The Merlot from Paraschos is a red wine that is both broad and juicy, where the innate richness of fruit is balanced by an energetic dose of freshness and sapidity. The name Paraschos has become a quality guarantee for lovers of artisanal wine, thanks to interpretations that leave everyone speechless for their ability to combine spontaneity and definition. No tricks and no artifices, and perhaps the "secret" is precisely this. A few hectares in San Floriano del Collio, the watershed between Italy and Slovenia, cultivated with very old vines of local varieties without the aid of any chemical or synthetic substances. Great attention and sensitivity in the winery give us some of the most exciting and symbolic bottles of the peninsula.

The red Merlot from Paraschos is made from pure grapes of the same name, coming from old vines over 80 years old from the Lucinico and Podsabotin vineyards. No forced intervention either in the vineyard or in the winery, where fermentation occurs spontaneously in oak vats with skin macerationof 28 days. The aging of the liquid takes place for 24 months in Slavonian oak barrels, barriques, and 25 hectoliter vats. Bottling without filtration or addition of sulfur.

The Merlot wine presents itself in the glass with a typical intense and lively ruby color. The nose can be both welcoming and detailed: it is the cherry, clear, that opens the olfaction, followed in succession by earthy notes, wilted red flowers, and countless spices. A serious profile, but characterized by a sincere deliciousness that invites a sip. On the palate, the liquid shows itself to be complete and rhythmic, chiseled in every component. Always enlivened by freshness and salt, never complacent, it flows on the palate and fades into a long and clear persistence. A high-definition red, invigorating!
