The "Don Carlino" by De Fermo is a pure Pecorino produced in Loreto Aprutino according to Stefano's artisanal and biodynamic belief. An electric, vertical, and visceral white, aged in cement tanks and wooden barrels, looking out to the Adriatic Sea in the distance, showcasing both mineral and briny aromas on the nose and palate, combined with scents of aromatic herbs and ripe fruit flesh.  

The Pecorino Don Carlino by De Fermo is a wine that amazes with its expressive mode, both energetic and rich in details and nuances. Minerality, a term so often used and abused in the wine world that, as an obvious counter effect, has been emptied of its meaning, losing effectiveness. A term, however, that is impossible not to associate with the Pecorino of De Fermo, a blend of mineral and saline puffs, truly engaging. One of the main Abruzzese grape varieties, cultivated without any shortcuts or chemicals in an elected terroir like that of Loreto Aprutino. Then the sensitivity of Stefano and his wife Eloisa, who try to intervene as little as possible during the winemaking process. Purity and rigor.

The white Don Carlino is obtained from pure grapes of the same name coming from vineyards located in Loreto Aprutino that rest on clayey limestone soils at 290 meters of altitude. In the vineyard, as already mentioned, only a little copper and sulfur are used, and in the cellar, the same belief is followed, so that, after manual harvesting with bunch selection and crushing, the alcoholic fermentation occurs spontaneously in cement tanks. Finally, it ages for 9-12 months in various containers including cement tanks, tonneau, and large barrels.

The wine Don Carlino fills the glass with its intense and lively straw-yellow color. An emblematic nose that unfolds in succession bursts of lime, yellow-fleshed fruit, as well as a constant sulfur note, intriguing and typical of the combination between the Pecorino and one of the most suited areas for its cultivation. The sip is dynamic, straight, and salty, refreshing for the purity of the mineral contribution. A tasting made of clarity and cohesion, which leaves a mark for its vibrancy and tension. A little gem.
