The Perdixi from Cantina Olianas is a Sardinian red wine made from Bovale and Carignano grapes vinified in amphora and aged in wood. It presents in the glass with a pronounced ruby red accompanied by intense aromas of black fruits in spirits, balsamic notes, and hints of vanilla and licorice. On the palate, it is full-bodied with a dense tannic texture, well balanced by a vein of freshness. 

The "Perdixi" by Olianas is a squeeze of the Mediterranean, a masterful fusion of material richness and infused spices. It comes quite spontaneously, when talking about Sardinia, to think of its queen grape, Cannonau, but we must not overlook the presence of other grape varieties capable of deeply embodying the Mediterranean soul of the region, such as Bovale and Carignano. The interpretation of the winery, born in 2000 from the meeting between Artemio Olianas and Stefano Casadei, is one of those that does justice to the two native grape varieties, returning the typical warmth of the area of origin, that of Sarcidano, in an elegant and centered way. The agronomic approach aims for minimal intervention, having adopted a bio-integral philosophy, which combines principles of biodynamics with attention to renewable energies. The result is wines of great breadth and depth, characterized by warmth and softness, but softened by an elegant and centered stylistic signature.

The "Perdixi" Olianas is obtained from a blend of Carignano and Bovale, with vines that rest on clayey soils, welldrained and exposed to the South for the Bovale and very calcareous soils with a sandy-clay texture for the Carignano. In the vineyard, no chemical or synthetic substances are used, while in the winery, separate fermentations are carried out: the Bovale ferments in amphora with skin maceration for about 35 days, while the Carignano in steel at controlled temperature with only indigenous yeasts. After blending, the liquid ages for at least 15 months in tonneau and large barrels and about 3 months in the bottle.

The wine "Perdixi" presents itself in the glass with an intense ruby color. Warm and Mediterranean nose, where hints of dehydrated plum, carob, scrub, and sweet spices intertwine. The sip maintains a perfect balance between significant structure, freshness, and very fine tannic grain, which continuously enhances the tasting. Jolly.
