Within the Collio Goriziano wine-growing area comes the Pinot Grigio of Borgo Conventi, a white wine of excellent smoothness and dynamism. Collio is undoubtedly one of the Italian areas most suited to the production of white wines, where international grape varieties such as Sauvignon Blanc, Chardonnay, Pinot Bianco and, precisely, Pinot Grigio have shown extraordinary adaptation, becoming an integral part of the local oenological tradition. As can easily be guessed, the word 'Collio' comes from 'colli', referring to the multitude of hills that cover the area.
Borgo Conventi Collio Pinot Grigio is a pure expression of the Pinot Grigio grape variety of the same name from vines aged between 10 and 45 years, grown on predominantly clayey soils deriving from the disintegration of the stratified marl and sandstone that characterise the area's subsoil. In the cellar, the grapes undergo direct pressing and the subsequent alcoholic fermentation takes place in temperature-controlled stainless steel tanks for a period of about 10 days. The subsequent maturation also takes place in stainless steel, where the mass remains a few months on the fine lees before bottling.
The Collio Pinot Grigio from the Borgo Conventi estate has a straw-yellow hue with faint auburn highlights.
