SOAVE CLASSICO 'MONTE CARBONARE' SUAVIA 2022 (TAPPO STELVIN) DESCRIPTION

Soave Classico 'Monte Carbonare' is an expression with a bursting mineral timbre made by the Veneto winery Suavia. In fact, the producer himself says that 'it is like having a piece of earth in your glass', the same earth that characterises the vineyards from which the grapes come: a very black soil of volcanic origin. It is no coincidence that the plot, which covers an area of 6 hectares, owes its name 'Carbonare' to the characteristic colour of the soil, which is reminiscent of coal.
Suavia 'Monte Carbonare' Soave Classico is made exclusively from Garganega grapes grown on volcanic soils with a clay texture, characterised by a particularly dark colouring due to the presence of black basalts. The vines, which are up to 60 years old, are grown using the Veronese pergola system according to organic farming principles, at an altitude of approximately 280 metres. In the cellar, the must obtained from the soft pressing of the grapes is conveyed into stainless steel tanks for temperature-controlled alcoholic fermentation, without malolactic fermentation. The ensuing maturation phase of approximately 12 months on the fine lees is also carried out in steel, and after a further 6 months of bottle ageing the wine is ready to be marketed.
The 'Monte Carbonare' Soave Classico from the Suavia winery has a luminous straw-yellow hue. The aromatic range opens on sulphurous mineral and smoky notes, soon joined by hints of citrus, exotic fruit, wild flowers and mountain herbs. Creamy and elegant on the palate, with excellent freshness and tanginess and a balanced, very persistent finish. A label with a strong personality that is a faithful reflection of the terroir to which it belongs, produced for the first time with the 1986 vintage and immediately becoming a staple for the estate.
