ArtisanalThe Nero d'Avola "Modus Bibendi" by Elios is a Sicilian red wine with a full-bodied yet refreshing profile produced in the area between Alcamo and Camporeale, at the border between the provinces of Palermo and Trapani. It ages for 9 months in chestnut tonneaux and releases a fruity and spicy bouquet with aromas of strawberries, cherries, licorice, and black pepper, while on the palate it is full and juicy, with enveloping tannic texture and a persistent finish. The Nero d’Avola “Modus Bibendi” by Elios has a character that does not go unnoticed. It carries all the characteristic signs of the land, sky, and sea of Sicily: this is where its dark and robust grapes are born, nurtured by three young men who have passion and entrepreneurship to spare. As it is savored slowly, without haste, one can almost see the satisfied smiles of Nicola and Roberto who, having inherited their father’s legacy, know how to put their heart into their wines. They follow principles that deeply respect the roots of the vines and the soil that embraces them: there are interventions, but all aimed at the growth of healthy plants that can express themselves in their best form.
Elios “Modus Bibendi” is a pure Nero d’Avola, whose vines enjoy favorable pedo-climatic conditions between the Mediterranean Sea and the mountains, between Palermo and Trapani, on a soil dominated by clay and limestone. The richness of the grapes is also enhanced by the presence of olive trees and bees in the fields adjacent to the vines: a biodiversity from which the plants draw the best. The harvest, which is done manually, is mid-September. Indigenous yeasts activate alcoholic fermentation in stainless steel tanks, where the maceration on the skins lasts about 7 days. The final aging is in chestnut tonneau and lasts for 9 months.
The "Modus Bibendi" Nero d'Avola by Elios releases strength in its ruby red color with violet reflections. The aromas do not take long to make themselves felt, and once this red is in the glass, they arrive straightforwardly: the fruity side leans towards strawberries and ripe cherries, while the spicy side tells of the East, licorice, and black pepper. On the palate, it is absolutely delicious and full-bodied, in a developed and well-balanced structure, where freshness runs on a texture characterized by enveloping tannins that embrace the mouth and the senses. The sapidity makes it appetizing, with a fruity and spicy finish that makes this wine a symphony in crescendo.
