Trento DOC Extra Brut "Perlé Nero" is the Ferrari winery's only Blanc de Noirs, that is, the only sparkling wine made exclusively from red grapes. So for the Lunelli family, now owners of this prestigious winery, the challenge was just that: to translate the power and finesse of Pinot Noir into a Metodo Classico with the perfect Ferrari style. The dosage chosen is Extra Brut so that the austerities of Pinot Noir are only slightly blunted, and its soul is left free to express itself at its best in terms of elegance and structure.
Ferrari's Perlé Nero comes from the finest selection of Pinot Noir grapes, harvested by hand from the best estate vineyards located in the highest mountainous areas. As is the case with every Metodo Classico, production consists of two stages. During the first, the base wine is made through a normal white vinification of the grapes; the second phase, on the other hand, is that of refermentation in the bottle. At the end of it, the sugar has been transformed into alcohol and carbon dioxide. During the resting period in the bottle, the yeasts break down, releasing hints of bakery and pastry, typical of every Metodo Classico sparkling wine, and imparting a unique, ever-changing complexity. In this case, the sparkling wine stays on the lees in the bottle for at least 6 years.
Ferrari's Perlé Nero sparkling wine blends austere indole and persuasive character. To the eye, it is golden yellow in colour with a lively, brilliant perlage. Its bouquet, accentuated by the movement of the bubbles within the glass, diversifies into fruity and floral, mineral and roasted scents. In the mouth, it is enveloping and silky, yet perfectly balanced by freshness and savoriness and enlivened by the refined pungency of carbon dioxide. The finish is precise and fine, well persistent. Because of the beautiful complexity of scents and aromas, it isn't easy to get away from the glass.
