The Hautes Cotes de Beaune from the French winery Maison En Belles Lies showcases the more accessible and graceful side of Burgundy's Pinot Noir. This label is crafted from grapes sourced from the Hautes Cotes de Beaune area, located to the west of the famous Cote de Beaune in an environmental context rich in forests where the vineyards are situated at a higher altitude, quantifiable between 100 and 200 meters above the Cote de Beaune. This higher elevation results in a slower and more gradual ripening of the grapes, which are generally harvested a week later than those from the Cote d'Or, simultaneously giving rise to lighter and more dynamic wines.
Maison En Belles Lies Hautes Cotes de Beaune is made exclusively from Pinot Noir grapes grown at about 500 meters above sea level, following the principles of biodynamic agriculture. The vines are over 50 years old and are rooted in clay-limestone soils. Following manual harvesting, the bunches are transferred to the winery where they are whole-cluster pressed with alcoholic fermentation.conducted exclusively by indigenous yeasts in oak vats. The resulting maturation period of a few months takes place in used oak barrels and the wine is finally bottled without any clarification or filtration.
Pale ruby red is the color of the Pinot Noir Hautes Cotes de Beaune from Maison En Belles Lies. The aromatic spectrum evokes crunchy scents of red fruits and violet, enriched by hints of jasmine and black olives.
