Champagne Rosé "Cuvée Perpetuelle" Bonnet-Ponson was born in a Récoltant-Manipulant Maison and is the fruit of the experience and savoir-faire of several generations of winemakers. It is a cuvée composed of the region's three classic grape varieties, Pinot Noir, Chardonnay and Meunier, perfectly blending harmonious fruit character with a pleasantly vinous feel. It is a Rosé of good structure and aromatic intensity, with aromas of small berries, enhanced by hints of citrus and spice, which increase its complexity and expressive richness. The absence of dosage allows the purity of the fruit and clear mineral freshness to be appreciated.
The Rosé "Cuvée Perpetuelle" is a Champagne from Bonnet-Ponson, a Maison located in Chamery and can draw on more than a century of experience in making great Champagne. The cuvée is made with a majority percentage of Pinot Noir, supplemented by Chardonnay and Meunier. The grapes come from different parcels classified Premier Cru, located in the communal areas of Chamery, Vrigny and Coulommes la Montagne. The vines are about 35 years old, and are grown on limestone-clay soils with the presence of siliceous sands and silt. Vinification is done separately by grape variety and individual parcel. After soft pressing, fermentation is carried out using only indigenous yeasts. The base wines are aged for 9 months in stainless steel tanks apart from a 30 percent share that matures in wood. When the final blend is created, a small percentage of Pinot Noir vinified in red is also added. The second fermentation takes place in the bottle according to the Champenoise Method, with a rest on the lees for about 40 months before dégorgement.
The "Cuvée Perpetuelle" is a Bonnet-Ponson Rosé Extra Brut Champagne that immediately highlights an extraordinary gastronomic vocation. As is often the case, Rosés are the most powerful and structured Champagnes, which at the table go very well with both savory meaty fish dishes and noble poultry or delicate white meats. In the goblet, it is rather deep pink in color, with bright and brilliant reflections. The bouquet is reminiscent of delicate floral scents, citrusy fragrances of pink grapefruit and tangerine peel, hints of lampone, wild strawberries and pomegranate. Harmonious and rich, it is distinguished on the palate by a broad and satisfying sip that lengthens toward a finish of vibrant freshness.
