Pala Vermentino di Sardegna 'Stellato' is a pure and profound interpretation of Vermentino produced from grapes harvested in the Is Crabilis vineyard, located within the municipality of Ussana, in the southern part of the island. The place name 'Is Crabilis', 'the kids' in Sardinian dialect, indicates that in the past there was probably a sheepfold used for goat breeding. In more ancient times, dating back to the Neolithic period, this area was the site of a village, as evidenced by tools found at the top of the hill.
The Vermentino di Sardegna 'Stellato' of the Pala winery is a pure Vermentino from 60-year-old vines rooted on sandy and clayey soils, rich in limestone and skeleton, located 180 metres above sea level. Following the harvest, the grapes are softly pressed, with the must thus obtained undergoing alcoholic fermentation in temperature-controlled stainless steel tanks. The mass then matures for about 5 months on the fine lees before bottling, and after a further short rest period in glass is ready for final release.
On visual inspection, Pala's Vermentino di Sardegna 'Stellato' shows a brilliant straw yellow colour with faint greenish highlights. Clear hints of field grass, broom and citrus characterise the olfactory range, assisted by evocative floral, saline and Mediterranean notes. The remarkable warmth and fullness on the palate are well balanced by the good freshness and marked savoury timbre, in a finish of excellent persistence. The producer's recommendation is to pair Vermentino di Sardegna 'Stellato' with medium-structured seafood dishes based on shellfish, crustaceans or various fish.
