This Amarone Classico Riserva “La Mattonara” is made from a blend of native red grape varieties, specifically Corvina, Corvinone, Rondinella, and Oseleta. All these varieties grow in the oldest parcels of Zymé's vineyards near the municipality of Negrar, where the average age exceeds 50 years. Here, the subsoil is characterized by the presence of limestone and clay. The grapes, once harvested, are naturally dried for at least 90 days, and then slowly pressed. The fermentation takes place spontaneously in steel and in cement, and the maceration on the skins lasts for over 60 days. The aging has a duration of 9 years in large Slavonian oak barrels, and continues even after bottling, for another 12 months.
The “La Mattonara” is an Amarone Classico Riserva that presents itself visually with a concentrated ruby color, with distinct reflections tending towards garnet at the rim. The nose is infused with fruity notes, which, in the finish, reveal balsamic and spicy touches. On the palate, it has excellent body, broad and enveloping, with a powerful and warm sip, which continues in the finish with excellent persistence. A label signed by Zymé that reaches important qualitative peaks, not only at the national level but also in important international trade magazines.
