“Redentore” is the second peak of the mountains to which Sibillini Spirits dedicates its brand and its vocation to the production of premium distillates: a tribute to the territory and its great variety of refined botanicals. The label's graphics evoke an ancestral world emerging from the mists of a legendary past: hand-drawn, it features a drop of water at the center of the illustration, symbolizing the clarity of Lake Pilato, and the figure of a priest, representing the centuries-old tradition of botanical research and the mystical vein that lingers in this protected area. The logo arises from the contrast between the Redentore and Pizzo del Diavolo mountains, which bring to mind the traditional antithesis between good and evil.

Sibillini Spirits creates its Bitter “Del Redentore” starting from local botanicals, gathered within the territory of the Sibillini Mountains Park, dominated by the peak that rises up to 2448 meters above sea level. The selection is particularly careful, while the ingredients of the revisited ancient recipe are dedicated to simplicity, even though the fine-tuning took

about a year of work. A pure grain alcohol is the base for the infusion of 30% bitter base: gentian, yarrow, and wormwood complete the 65% aromatic part, made up of apple, rosehip, and orange thyme. The last 5% is represented by plants and roots that act as a binder between the flavors. The infusion times vary by ingredient: after mixing and filtering, sugar syrup is added to water from the Marchigiani springs to bring the Bitter to a degree of 25%.

The Bitter “Del Redentore” by Sibillini Spirits presents an elegant appearance with a natural full red color, with evident garnet reflections, and lets out aromas distinctly linked to the herbs and fruits used in preparation. The decisive and highly characterized taste is marked by a pronounced and persistent bitter nuance that recalls autumnal woodland sensations and accompanies and enhances the herbaceous freshness and balsamic and woody tones. Surprising when tasted neat, it shows a varied versatility in the most diverse uses of high-level mixology.
