The grapes Xarel lo, Macabeu, Parellada, Chardonnay make a pleasantly balanced blend, which is then allowed to mature up to 40 months according to the Classic Method. The sip concentrates aromas of ripe fruit, hints of leivito and toasted notes.
The Cava Brut Nature Reserva 40 by Rimarts is a label that perfectly combines the clear freshness of a very low dosage with the mature complexity and persistence derived from long aging on the lees. It is a Metodo Classico of great expressive harmony, which, while maintaining the varietal profile of the grapes intact, offers a bouquet enriched with notes of tertiary evolution, making it more multifaceted and rich. Due to its particular characteristics, it is a bottle with a precise gastronomic vocation, pairing very well with a menu based on fish or delicate white meats.
The Reserva 40 is a splendid interpretation of a classic-faced Cava, made by one of the most interesting brands in the area. Rimarts is a small winery that has managed to preserve a family character and a craft approach to the world of wine. Characteristics that significantly differentiate it from the large commercial brands that dominate the Spanish sparkling wine denomination. The estate extends over a total of about fifteen hectares in the prestigious area of Sant Sadurni d’Anoia and is run according to the principles of organic farming. At the end of the harvest, grapes of Xarel·lo, Macabeu, Parellada, and Chardonnay are gently pressed and vinified separately. The base wines are then blended, and the final cuvée undergoes a second fermentation in the bottle according to the Metodo Classico, with a stay on the lees of at least 40 months. The dégorgement is still done manually.
The Reserva 40 Brut Nature Cava by Rimarts is an interesting alternative to the more renowned French bubbles. Visually, it captivates with a bright golden yellow color with brilliant reflections, crossed by a perlage of great finesse and remarkable persistence. The olfactory profile is particularly charming, rich and complex, with aromas of yellow fruit, hints of candied citrus peel, nuances of wildflowers, soft sensations of pastry, notes of toasted bread, and dried fruit. On the palate, it has a good structure, is broad, intense, with a deep and complex sip that lingers persistently towards a long, harmonious finish with pleasant freshness.
