The Champagne “Terres Argileuses” is a cuvée that exudes tension, finesse, and great freshness. A true gem produced in limited quantities by Tristan Hyest, a young vigneron, son of a generation of winemakers, who decided to carve out a small plot of 10 hectares from the family-owned land to produce artisanal and genuine Champagne according to his philosophy. It has been the great experiences around the world and the long family tradition that helped Tristan develop his own idea of Champagne: a bottle that highlights the territory and the grape, minimizing human intervention. The “Terres Argileuses” perfectly embodies Tristan's style and reflects all those elements that characterize the terroir of the estate. Starting already from the name which translated means “clay lands”, with this label it feels like traveling in the Champagne region and caressing Tristan's splendid vineyards.
The Blanc de Blancs “Terres Argileuses” is made from a selection of noble Chardonnay grapes in purity coming from the lands of the Grande Vallée de la Marne, one of the most famous areas in the entire region. The cuvée is blended with 80% vintage wines and 20% reserve wines. The first fermentation is carried out by indigenous yeasts, while the second fermentation takes place in the bottle, according to the Champenoise method regulations, aging for over 55 months on the lees.
The “Terres Argileuses” is dressed in a bright, luminous, and golden outfit, embellished and edged with a fine and silky bubble. The bouquet is characterized by a fruity opening of golden apple, lemon, and floral fragrances, which give way to sweeter and gentler nuances reminiscent of a freshly baked croissant, shortcrust pastry, and pastry cream. A clear chalky note, linked to the mineral matrix of the territory, completes the olfactory picture. On the palate, it reveals an enviable citrus tension, a marked mineral freshness, and a delicate fine-grained bubble that makes the sip smooth yet refined.
