The “Plénitude 2” Brut by Dom Pérignon is a Champagne vintage of great charm and elegance, intense and extraordinarily balanced, produced by the famous Maison in Épernay, in the Champagne-Ardenne region of France. This label is a blend of grapes, the result of the canonical union between the best selections of Chardonnay and Pinot Noir varieties, coming exclusively from Grand Cru vineyards owned, located in the municipalities of Ay, Bouzy, Verzenay, Mailly, and Hautvillers for Pinot Noir, and from those of Cramant, Choully, Avize, and Le Mesnil for Chardonnay. The peculiarity of “P2”, or Plénitude Deuxième, is that it is a Champagne capable of defying time and gradually acquiring more taste fullness, while maintaining the great minerality, a characteristic signature of the maison. In fact, after several years of studies, tastings, and comparisons, Richard Geoffroy, chef de cave of Dom Pérignon, discovers that after 7-8 years of aging on the lees expected for the classic vintage, Dom Pérignon Champagne continues to improve, but not gradually; rather, it makes two significant leaps: the first after about 15 years and the second after more than 25.years. From here, two new labels are born, namely P2 and P3, which express the various plénitudes, or windows of time in which Champagne suddenly enters a new 'fullness'.
The 'Plénitude 2' Dom Pérignon Brut is produced from carefully selected grapes harvested by hand in small crates. The bunches, brought to the winery as quickly as possible, are then pressed directly and fermented in temperature-controlled stainless steel containers for several weeks to obtain the base wine of the vintage. The addition of the liquer de tirage follows for the second fermentation in the bottle, with the wine remaining on its lees for almost 15 years before disgorgement and topping up with liquer d’expedition, as per the brut category.
The Brut 'Plénitude 2' of Dom Pérignon presents a bright golden yellow color with a very fine and delicate perlage. On the nose, intense, broad, and complex aromas emerge, ranging from ripe yellow fruits, including peach and apricot, to floral notes of bergamot, herbsaromatic and hay, leading to citrus notes, sweet spices, and butter, with slight toasted hazelnut nuances and iodized hints in the finish. On the palate, it is creamy, energetic, light, and refined, characterized by a striking freshness relative to its age and a slightly smoky aftertaste. This 'P2' from Maison Dom Pérignon is a sumptuous, harmonious Champagne of great character, where complex maturity becomes light, and to close with the words of the immense Richard Geoffrey: 'first it seems to dance on tiptoes, then it envelops you.'
