It is a medium-aged Cognac, made with a careful blend of wines from the Grande Champagne and Fins Bois regions. The VSOP Cognac is born in the area between Verrières and Echallat, where the Maison Vaudon cultivates vineyards of Ugni Blanc, a variety corresponding to our Trebbiano, particularly suitable for distillation. The vineyards are managed with great care and respect for the surrounding nature, with the awareness and experience that only from quality base wines can great Cognacs be born. The The distillation process takes place following the oldest traditions, using traditional Charente stills heated with direct flame, capable of producing Cognac with great expressive finesse. Maturation occurs in two phases. The cognac first ages in new Limousin oak barrels and then in previously used barrels, which no longer impart vanilla and wood notes to the Cognac, but only favor its slow aromatic evolution.
