The Gin "Ki No Bi" is produced by The Kyoto Distillery, a refined artisanal reality that has specialized in the production of high-quality Gin, characterized by a profile faithful to the models of European tradition, interpreted through a careful selection of top-quality local botanicals. It is a recent brand, but it can count on the great tradition of the territory in rice cultivation and sake distillation. Starting from this heritage of historical knowledge, combined with a passion for the world of Japanese flora, Gin of extraordinary finesse is born, still produced in small batches, delighting connoisseurs and the most attentive enthusiasts.
The "Ki No Bi" Gin from The Kyoto Distillery is a splendid excellence of the Rising Sun. The preparation process of the Gin starts from a refined alcohol obtained from rice, according to the oldest Japanese traditions, derived from centuries of experience in sake production. It follows a slow and patient infusion and maceration phaseof the botanicals, in order to extract all the precious aromas of herbs, roots, plants, and berries. The selection of ingredients has been curated with great knowledge of classic Gin, choosing the best that Japanese flora can offer. The botanicals are divided into six main families: the base ingredients, such as juniper, iris, Hinoki wood; yellow Yuzu and lemon citrus; the herbs from Kinome shoots and green Sansho pepper; the spices represented by ginger; the flowers and fruits with bamboo and shiso leaves, and finally the indispensable green tea Gyokuro. The six groups of botanicals are distilled separately, in order to create homogeneous bases characterized by clear expressive purity. Only at a later stage is the blending carried out, in order to achieve perfect harmony. Before bottling, the Gin is lowered in proof with pure water from the Fushimi springs.
The "Ki No Bi" Gin, produced by The Kyoto Distillery, is a version of the famous northern European distillate that stands out for a particularly refined profile and for itsability to combine the oldest Japanese customs with the classic models of the great Gins of the best tradition. A synthesis of culture, obsessive precision, and attention to detail, it presents itself in the glass as absolutely transparent and crystalline. On the nose, it captivates with fine and delicate aromas of white flowers, citrus zest, fragrant hints of lemon, nuances of medicinal herbs on an enveloping balsamic background of juniper berries. The sip is very elegant, with delicate and finely nuanced aromas, leading to a harmonious, persistent finish with extraordinary taste balance.
