In this way, the raw material arrives at the distillery still very fresh, rich in the scents and aromas of the must. The distillation takes place with extreme care and skill, using copper column stills, heated in a water bath, in order to maintain a constant temperature and not subject the structures to direct heat.direct. A technique that allows for sweeter extractions and finer, more delicate distillates. The long aging process begins with 18 months in small cherry, ash, oak, and robinia barrels, followed by a final phase in carefully selected wooden barrels previously used for aging fine Scottish whiskies, some of which are peated, contributing to enrich and make the aromatic spectrum of the grappa more complex.
