The Malvasia “N° 5” from Podere Cipolla is the newest creation by Denny Bini, an irresistible expression of the homonymous grape variety vinified still. We feel the need to specify this, because at the moment of discovering a non-sparkling wine made by Denny, curiosity became uncontrollable. We venture without fear of contradiction: one of the masters of the refermented Emilian wines, the true homeland of the type, has pulled another little gem out of the hat. After all, Denny is a guarantee when it comes to direct, territorial liquids that go straight to the heart. 3 hectares of vineyards in Coviolo, near Reggio Emilia, and the firm decision to be guardians of a place and a tradition, without altering in any way what nature offers. In the vineyard, where Malvasia Di Candia, Lambrusco, and Malbo Gentile grow, no chemical or synthetic substances are used, and in the winery, the approach is equally respectful. True author's bottles, aimed at conveying the value of good and healthy wine on the everyday table.
The “N° 5” Malvasia by Denny Biniis obtained from pure grapes of the homonymous variety. The biotype is the classic one of the area, namely the Malvasia Aromatica di Candia, vinified without any intervention or forcing, thus banning any substance except for copper and sulfur. Fermentation occurs spontaneously, without the liquid being filtered or clarified, and in the case of this new gem, it is vinified still with 4 days of skin maceration. Aging in steel for a few months and bottling with a minimal addition of sulfur dioxide.
The “N° 5” Podere Cipolla lights up the glass with its magnetic golden dress. Explosive and engaging nose, which unfolds a remarkable variety of suggestions: apricot, orange blossom, the countryside, orange honey. The sip is dynamic and vital, a true grape juice that makes irrigating freshness its strong point.
