Il Pet-Nat Tea "BI" di Ama Brewery è una Kombucha fine e delicata perfetta per accompagnare crostacei e piatti a base di pesce. Viene realizzata con acqua proveniente da una fonte dei Paesi Baschi e Lemongrass dallo Sri Lanka. Il colore giallo paglierino tenue introduce aromi ben definiti di agrumi ed erbe balsamiche. The Pet-Nat Tea ‘BI’ from the Spanish producer Ama Brewery is a refreshing and citrusy kombucha perfect to enjoy as an alternative aperitif. Each bottle of these slightly alcoholic Pet-Nat teas contains the so-called “scoby”, a symbiotic culture of yeasts and bacteria responsible for the fermentation that gives rise to kombucha, which appears as a dense, opaque, and gummy mass. Depending on personal preference, the scoby can be served with the kombucha or removed before serving.

Ama Brewery Pet-Nat Tea ‘BI’ is produced from water sourced from the Izarraitz Massif spring in the Basque Country, and lemongrass cultivated in a nature reserve by Amba Estate, in the mountains above the Ravanna waterfalls in Sri Lanka. The small Amba estate is located precisely in the Uva Highlands area, where it cultivates a local wild variety of lemongrass known as Cymbopogon flexuosus. The grass is hand-harvested and then left to dry in the sun to concentrate the numerous essential oils contained within it. After infusion and fermentation, the Pet-Nat Tea ‘BI’ is left to rest for 6 months in the bottle before marketing.

The Tea ‘BI’ Pet-Nat from Ama Brewery has a pale yellow and cloudy hue. The aromatic profile offers fine and delicate citrus notes that blend with pleasant perceptions of herbal balsamics such as mint. Citrus flavor, crisp and slightly sweet, with a fine effervescence that enhances the pronounced sensations of lemongrass, ginger, and various spices. The producer himself states that this kombucha can easily age for at least 3 years and is an ideal pairing with various seafood preparations.
