Organic and biodynamicThe Pinot Noir Mora by Du Vin aux Liens is a wine produced by Domaine Albert Hertz, winery Alsace, under the supervision of Vanessa Letort. It is a chemical project that spreads organic wines, light and very pleasant, with great delicacy and playfulness. On the nose, red fruits, black fruits and wild berries typical of Pinot are felt, with mineral elements common to the terroirs of northern France. From the collaboration between Vanessa Letort and Domaine Albert Hertz, within the wine project Du Vin aux Liens, comes the Pinot Noir ‘Mora’, an Alsatian label that stands out for its crisp and seductive aromas. The bond between Pinot Noir and Alsace is very strong as this is the only black grape variety found in the region. Compared to their Burgundian counterparts, Alsatian Pinot Noirs are more accessible and juicy, with a prominent fruity component.
Du Vin aux Liens ‘Mora’ Pinot Noir is an expression of the eponymous black grape cultivated in soils rich in limestone marls within the village of Eguisheim, with a southeast exposure. The vines are on average 25 years old and are managed under certified organic and biodynamic regimes. After harvesting, the bunches are destemmed and undergo spontaneous alcoholic fermentation associated with 18 days of skin maceration. The subsequent aging phase takes place in small Burgundian oak barrels, where the wine matures for 18 months on the fine lees before bottling. Throughout the entire process, the liquid is not filtered and the use of additives and enological aids, including sulfur, is excluded.

The aromatic profile offers fruity sensations of blueberry and cherry that blend with hints of underbrush and notes of spices and flint. Fresh, sharp, and mineral is the taste development, with delicate tannins that anticipate the fragrant fruity finale. Due to these organoleptic characteristics, the Pinot Noir ‘Mora’ represents the ideal pairing with main courses based on meats such as duck, lamb, and beef, but also with aged cheeses and dishes seasoned with mushrooms or truffles.
