It is made from grapes harvested at 750 metres above sea level and re-fermented in the bottle using the ancestral method. The colour is a bright pink with copper highlights and the bouquet is decisive, reminiscent of small red fruits and floral sensations. The taste is fresh, savoury, mineral and alive!
The Rosé Frizzante sui Lieviti ‘Eos’ from the Piedmont estate La Chimera is a rosé Metodo Ancestrale genuine soul, the result of an artisanal production philosophy. The small winery La Chimera operates in Chiomonte, in the rugged Val di Susa, representing a precious example of heroic viticulture. In fact, the high altitudes touch and sometimes exceed 1,000 meters above sea level, while the significant slopes require the creation of terraces supported by dry stone walls, as well as the laborious manual execution of all vineyard operations. A pride of this alpine area is the presence of extremely rare indigenous black grape varieties that have been preserved and enhanced, such as Avanà and Becuet.
The Chimera ‘Eos’ Rosé Frizzante sui Lieviti comes from only Avanà grapes grown according to the principles of organic farming within the Val di Susa, where the altitude is 750 meters above sea level and the soils are stony and rather poor. The harvest is carried out by hand while the subsequent alcoholic fermentation occurs spontaneously in stainless steel tanks thanks to only indigenous yeasts. Before the end of the fermentation process, the must-wine is bottled for the prise de mousse according to the Metodo Ancestrale, which allows the production of carbon dioxide directly in the bottle thanks to the conversion of residual sugars.
‘Eos’ Rosé Frizzante sui Lieviti La Chimera has a bright pink hue with brilliant reflections. The olfactory spectrum is intense and fragrant, defined by floral sensations accompanied by light hints of red fruits. On the palate, it is lively and decisive, made agile by the pronounced freshness that combines with notable salinity in a pleasant mineral finish. A rosé Metodo Ancestrale capable of delighting the senses with its delicacy and expressive fragrance, an original expression of a unique and singular territory.
