The Sidro Brut by Eric Bordelet is one of the most famous and popular labels of this great interpreter of the territory and of the oldest traditions of Normandy. It is a dry and linear Sidro, born from a selection and fermentation of numerous varieties of apples, each with different characteristics, aromas, and flavors. The fruits come, in fact, from trees of ancient native varieties, carefully preserved and particularly suited for Sidro production. The floral and pleasantly fruity aromas, the dry and savory taste, tense and balanced make Sidro Brut a perfect companion to enjoy at aperitif time.

The Brut by Eric Bordelet is a Sidro produced in the heart of Normandy, where for centuries this alcoholic beverage made from fruit has been produced, a true icon of the territory. In these lands, the tradition of cultivating orchards for Sidro production is ancient, and as a testament to this custom, many varieties of native apples have been preserved, which have disappeared in other regions. The secret of a good Sidro, in fact, lies in the choice of different apples, some sweet, others bitter, others more acidic, which together form the right blend to create a perfect taste harmony. Eric Bordelet cultivates a selection of about twenty varieties of apples on his estate, which are the basis of the goodness of his labels.

The Bordelet Sidro is born from a manual harvest of the best fruits, which takes place from September to December, depending on the ripening time of each single variety of apple. The processing of the fruit finds its crucial moment in the fermentation phase, which leads to the bottling of the Sidro still with a slight residual sugar, according to the Ancestral Method. During the bottle aging, a second fermentation occurs, which consumes the residual sugar and gives the Sidro a pleasant and delicate natural effervescence. In the glass, the Sidro presents itself with a golden yellow color with brilliant reflections. The bouquet recalls fragrant notes of white-fleshed fruit, with pronounced aromas of fresh apple, delicate nuances of aromatic herbs, and slightly spicy hints. At the palate has a fresh and savory attack that unfolds harmoniously towards a juicy mid-palate. The finish is harmonious and of great taste balance.
