His adventure began in the early '90s when he decided to dedicate himself to the old family estate, where more than 100 varieties of apples and pears were cultivated.of apples and pears. Starting from the manual harvesting of the fruit, with careful selection of perfectly ripe pears and apples, to the work in the winery. The fruit is pressed and the musts are macerated with the skins and then fermented in wood or in steel tanks. The must is filtered and bottled still in the fermentation phase, so that it can consume the residual sugar and return the lively vivacity of the carbonation.
