The Viktorija by Slavcek is a rare Slovenian classic method that stands out for its sapidity and finesse, as well as for an extremely respectful approach to fruit and territory. In one of the Slovenian areas most suited to agriculture, according to historical documents, lies the Slavcek winery, today confidently led by Frank and Alenka Vodopivec. The vineyard consists of about 6 hectares entirely immersed in a wooded nature, cultivated without the aid of chemical or synthetic substances, but only with cover crops and natural manure. In the winery, the same approach continues, with spontaneous fermentations and an extremely reduced use of sulfur dioxide. The Ribolla Gialla, the predominant grape in this classic method, shows all its potential and its refined saline texture. 45 years old, resting on marl soils. The extremely limited yield and adherence to numerous biodynamic principles are the prelude to fruits of extreme quality given the health of the bunches. After the harvest, which is carried out strictly by hand and involves sorting the grapes, destemming and the first spontaneous fermentation take place in steel containers, with a resting period on the fine lees of 1 year. The second fermentation occurs in the bottle, thanks to the addition of fresh Riesling must. The total aging is 26-28 months on the lees.
