Monsignore's Alta Langa Extra Brut is an interesting bubbly from the surroundings of Mondovì, with vineyards located on an ancient property of the local bishop. The blend is perfectly divided between Pinot Noir and Chardonnay, a choice dictated by a desire for balance. On the nose, ripe white fruit and pastry aromas are perceived, but the hallmark is a pleasant herbaceous profile. The palate is creamy and enveloping, with a clear, elegant and persistent freshness. It pairs perfectly with Piedmontese hors d'oeuvres such as vitello tonnato
