The “Zero de Saignée” is an Alta Langa Rosé Riserva Pas Dosé by Enrico Serafino made with Pinot Noir grapes from vineyards that are about 25 years old, located in the areas of: Loazzolo, Vesime, and Bubbio at an altitude of 450-550 meters above sea level on soils composed of calcareous-clay, particularly suitable for the great Burgundy grape variety. At the end of the harvest,By hand, the best grapes are subjected to soft pressing with a brief contact with the skins, and the must is vinified in white in temperature-controlled stainless steel tanks. After 6 months of aging on the fine lees, with periodic bâtonnage, the base wines are blended to create the final cuvée. The second fermentation takes place in the bottle according to the Metodo Classico, with a resting period sur lattes of at least 60 months before proceeding to disgorgement.
