The Albarino Frizzante ‘Ancestral’ is configured as a craft bottle with a marine soul, produced in Galicia by the Albamar winery. It is a sought-after interpretation in the Ancestral Method version of the native grape variety Albariño. The Albamar wine estate, located in Cambados, in the Rias Baixas, is led by the Alba family, who in 2006 found in the young Xurxo more than just a resource. In fact, the winemaker has inherited the viticultural legacy of his father, dedicated to producing rather simple wines, with the intention of creating sincere expressions in harmony with nature, directly conveying in the bottle the Atlantic territory where the grapes grow.
Albamar Albarino ‘Ancestral’ Frizzante is produced with only Albariño grapes grown according to the principles of organic farming, supplemented by biodynamic practices, on soils rich in granitic sand and slate near the Atlantic Ocean. In the winery, alcoholic fermentation is entrusted exclusively to the yeasts present on the grapes and in the winemaking environment, while the refermentation takes place in the bottle with the natural sugars of the must-wine according to the Ancestral Method, from which the name derives. The aging on the lees in the bottle lasts for 8 months before the final disgorgement.
To the eye, the Albarino Frizzante 'Ancestral' from the Galician winery Albamar reveals a straw yellow hue. The olfactory panorama is described by aromas of white flowers and lemon zest, enriched by marine mineral sensations. On the palate, the citrus freshness is enhanced by fine and well-integrated bubbles, which anticipate the pleasant salty finish almost briny. For its lightness and dynamism, as well as its maritime character, this Albariño represents an exceptional pairing with mixed fried fish.
