From the Abbia Nova winery, the Cesanese del Piglio Superiore is an indigenous grape variety from the Lazio region. After destemming, the grapes undergo a maceration on the skins for 20-25 days, followed by alcoholic and malolactic fermentation by indigenous yeasts. The aging is done for 6 months in oak barrels and 12 months in cement tanks. It pairs well with local traditional cuisine, thanks to its structure, velvety palate, and fine tannins.

The Cesanese del Piglio Superiore by Abbia Nova is an artisanal expression with a velvety taste coming from the hills of Piglio, in the Frosinone area, southeast of the city of Rome. The DOCG Cesanese del Piglio, or simply Piglio, is one of the most prestigious denominations in the Lazio wine scene. It can be produced exclusively with the 2 main biotypes of Cesanese: the Comune and the Affile, present at least 90%, to which a 10% of other grapes can be added. Documents attest to the cultivation of Cesanese as far back as Ancient Rome. To enhance these varieties, in 2006 the Strada del Vino Cesanese was established, a beautiful itinerary that crosses the provinces of Rome and Frosinone dedicated to wine and the vine.

Abbia Nova Cesanese del Piglio Superiore is made from pure Cesanese di Affile grapes grown on clayey-volcanic soils, rich in sand and silt, respecting the principles of organic farming, also integrated with biodynamic practices. After the harvest, the bunches are destemmed and crushed, while the alcoholic fermentation is carried out by indigenous yeasts and is accompanied by 20-25 days of maceration on the skins, without temperature control and with complete and spontaneous malolactic fermentation. The wine then matures for 6 months in oak barrels, followed by a year in cement tanks before bottling, which takes place without clarifications or filtrations.

The Cesanese del Piglio Superiore Abbia Nova has an intense cherry red color. On the nose, hints of pomegranate and oregano emerge, combined with balsamic notes of mint and pleasant spicy hints. Soft and velvety tasting, with excellent structure, lively freshness, and a fine tannin.
