The Champagne Brut ‘Apanage’ by Pommery is a Classic Method with a complex yet balanced style, resulting from the most classic of champenoise blends, the fruit of the union of the three main varieties of the region: Chardonnay, Pinot Noir, and Pinot Meunier. The ‘Apanage’ collection includes high-quality Champagne that perfectly embodies the precious and refined character of Pommery. Compared to the classic line, these Champagnes have a higher percentage of reserve wines, which translates into greater expressive complexity.
The Champagne Pommery ‘Apanage’ Brut consists of a blend of Chardonnay grapes (40%), Pinot Noir (30%), and Pinot Meunier (30%), sourced from 17 different villages in Champagne, most of which are located in the Montagne de Reims area. Following the harvest, the bunches are transferred to the winery where they undergo gentle pressing followed by the alcoholic fermentation of the must in stainless steel tanks. The sparkling base is obtained from the combination of the vintage wine and a high percentage of reserve wine, an essential factor in determining the personality of this Champagne. The secondary fermentation clearly takes place in the bottle according to the Champenoise Method, accompanied by at least 42 months of aging on the lees until disgorgement and subsequent Brut dosage.
The Brut ‘Apanage’ Champagne Pommery showcases a pale straw yellow color with a fine perlage. The aromatic profile consists of inviting scents of pink grapefruit, dried apricot, and butter, combined with complex hints of hazelnut, pastry, and blonde tobacco. The balance on the palate between creaminess and lively freshness is excellent, elements that come together in a juicy and deep development, marked by a pleasantly rich finish.
