The "Influence" Champagne is the result of a vinification in barrique and a long stay on the lees for at least 7 years. Notes of candied citrus fruits, toasted dried fruit, memories of pastry, cream and nuances of spices and vanilla enrich a refined, complex and harmonious sip, with fresh tension and mineral contours
and vinous, long and persistent, characterized by broad and creamy aromas, well balanced by a fresh and mineral finish.They take place in French oak barrels, 30% with less than 4 years and the remaining 70% with more than 5 years of age. The vins clairs mature for 6-8 months in barrels on the fine lees and with periodic bâtonnage, without undergoing malolactic fermentation. The final blend is made with the base wines of the vintage to which a 15% of reserve wines is added. The secondary fermentation takes place in the bottle according to the Champenoise Method with a minimum aging on the lattes of 7 years before disgorgement.and vinous, long and persistent, characterized by broad and creamy aromas, well balanced by a fresh and mineral finish.
