On the palate it is soft and of great dynamism, with a taut and slender sip, with a nose rich in aromas of white-fleshed fruit, floral hints and a pleasant citrus sensation
The Champagne Extra Brut ‘Borde de Marne’ is a pure and profound sparkling wine, of great class, produced in Trélou-sur-Marne by the Récolltant Manipulant Tristan Hyest. This small producer from the Vallée de la Marne cultivates a few hectares of vineyards dedicated mostly to Pinot Meunier, the most widespread variety in the area, alongside the other noble Champagne grape varieties Pinot Noir and Chardonnay. The production approach is genuine and artisanal, aimed at enhancing the truest expression of the territory, while the production is unfortunately limited to a few thousand bottles released each year.
The ‘Borde de Marne’ Tristan Hyest Champagne Extra Brut is made from a blend of Pinot Meunier (40%), Pinot Noir (30%), and Chardonnay (30%), grown through sustainable practices on soils rich in gypsum and limestone marls. In the cellar, the alcoholic fermentation occurs solely through the intervention of indigenous yeasts, and the vintage wine is subsequently added with a 50% of vin de reserve. The refermentation takes place in the bottle according to the Champenoise Method, with at least 36 months of aging on the lees, after which the dégorgement and the dosage Extra Brut are carried out.
In the glass, the ‘Borde de Marne’ Extra Brut Champagne by Tristan Hyest presents itself with a straw yellow color with golden reflections, and very fine bubbles. The aromatic spectrum opens with perceptions of yellow fruit, pastries, and citrus, accompanied by floral, mineral, and dried fruit aromas. The tasting is lifted and elegant, of remarkable delicacy and great tension, with a fine finish that recalls the sensations perceived on the nose. A pure Champagne that can be enjoyed both as a refined aperitif and at the table paired with seafood or meat appetizers.
