The Champagne Extra Brut Rosé "Borde de Marne" by Tristan Hyest is produced in Trélou-sur-Marne in the heart of the Champagne Region in France. The winery is family-run: Tristan's father bought some vineyards in the 1980s, acquiring the necessary skills to bring the business to life. His son Tristan studied oenology to preserve the investment and the working heritage of his parents, creating his cuvées that encapsulate all his passion and expertise.
The vineyards of the Champagne Extra Brut Rosé "Borde de Marne" by Tristan Hyest extend over about 10 hectares of land; the soil is mainly composed of gypsum and limestone with sporadic presence of sand, pebbles, and clays for wines with a unique and inimitable character. The climate is predominantly continental with winters characterized by cold temperatures and night frosts and sultry summers with high temperatures. Tristan's work daily reveals passion and attachment to tradition, so much so that the harvest is carried out manually in respect of the raw material and in the cellar the alcoholic fermentations are carried out thanks to the action of indigenous yeasts; subsequently it undergoes secondary fermentation in the bottle using the Metodo Chapenoise; it ages for over 36 months on the lees.
The Champagne Extra Brut Rosé "Borde de Marne" by Tristan Hyest presents itself in the glass with a intense cherry pink with orange reflections. The bouquet of aromas recalls red currant, cooked red apple, and hints of brininess on the finish; on the palate it is dynamic, savory, and fresh with a fresh bubble that tickles the palate and invites you to drink. It pairs perfectly with dishes based on sushi and sashimi, fish tartare, and first courses seasoned with shellfish and seafood; interesting also with blue cheeses.
