His deep knowledge of the territory and love for Burgundy wines have led Frederic Savart to pursue a path aimed at enhancing the individual parcels, bottling them separately. The Champagne Rosé Brut Premier Cru “Bulle de Rose” from the Maison of Frederic Savart is produced with a selection of Pinot Noir and Chardonnay grapes, coming from vineyards cultivated in the territory of the Premier Crus of Ecueil and Villers-aux-Noeuds. At the end of fermentation, a small percentage of red vinified Pinot Noir is added to the vins clairs in the blend. The secondary fermentation takes place in the bottle according to the Méthode Champenoise, with a resting period on the lees of at least 24 months. In the glass, it presents itself with a delicate coral pink hue, crossed by a fine and continuous perlage. The olfactory spectrum recalls citrus fruits, small berries, bread crust, and soft spices.
