It has a golden yellow garment of great brilliance and releases hints of yellow peach and mango, pineapple, mountain butter and vanilla pod, with intense flavors of broom. At the mouthfeel it is refreshing and energetic and reveals a surprising salinity, in accompaniment to a comfortable and enveloping softness, from the finish of dried fruit.
The Chardonnay “Les Varrons” from Domaine Labet is a French white wine produced in the Jura region. It is a version of the noble Burgundy grape variety made in the sign of richness and aromatic complexity. The long aging in barrique gives an important structure to the wine, with the development of a range of intense and elegant tertiary notes, which enrich the characteristic varietal bouquet, floral and fruity, of Chardonnay.
Domaine Labet Chardonnay “Les Varrons” originates in Jura, a French region with great traditions in viticulture, located near the Alps north of Geneva. Domaine Labet is a small family-run estate that cultivates about fifteen hectares in the southern part of the region. In the selection of grape varieties, those historically present in the territory have been favored: Savagnin and Chardonnay for whites and Pinot Noir and Trousseau for reds. A large part of the grapes come from historic vines that are over 70 years old and produce few clusters of the highest quality. The Chardonnay grapes are cultivated in two parcels: Les Varrons and Rotalier, planted in 1932 and 1940. The vines are located at an altitude of 280 meters above sea level, with an east-facing exposure and are composed of forty different clones of Chardonnay, resulting from mass selection. They are trained in Guyot with a density of 8000 vines per hectare on fine calcareous-clay soils, rich in fossil deposits of ancient marine origin. After soft pressing, the must is spontaneously fermented with indigenous yeasts. The wine matures on the lees in used barriques for 18 months and is bottled with a very low percentage of sulfites.
The “Les Varrons” Chardonnay from Domaine Labet is an important, rich, and intense white that pairs well with flavorful seafood dishes or white meats. It presents a bright golden straw yellow color and the bouquet expresses complex aromas with notes of pineapple, mango, tropical fruit, apple, yellow peach, dried fruit, soft honeyed sensations, pastry notes, and hints of vanilla. The palate is broad and dense, with ripe and persistent. The finish is harmonious and closes on fresh and savory notes that embody the great minerality that characterizes this ancient terroir.
