The Picapol Blanc from Domaine de la Bohème represents a refined expression of Picpoul Blanc with an aromatic profile floral and Mediterranean. The origin of this ancient grape variety, also known as Piquepoul Blanc and Picpoul de Pinet, dates back to Languedoc and later, due to the phylloxera crisis, the grape lost interest in the eyes of winemakers also due to its limited production and sensitivity to fungal diseases. This variety, now re-evaluated mostly in blends with other grapes, has a very small distribution even in the Southern Rhône, where it is allowed in the production of the famous Chateauneuf-du-Pape. The pure version offered by this winery in Auvergne, made through a very short skin maceration, is therefore absolutely rare and intriguing.
Domaine de la Bohème Picapol Blanc is a 100% Picpoul Blanc grown according to the principles of organic farming on volcanic soils. Once harvested, the bunches are taken to the winery for spontaneous alcoholic fermentation in steelwhole bunch associated with a very short contact of the must with the skins. Malolactic fermentation and maturation for a few months also take place in steel, and the wine is finally bottled without undergoing any clarification or filtration and without the addition of sulfites.
The Picapol Domaine de la Bohème Blanc has a straw yellow color with greenish reflections. Fragrant and articulated aromas of summer fruit, citrus, and white flowers characterize the nose, along with evocative Mediterranean sensations. Lively and harmonious sip, with a tempting freshness and firm savory component that leads to a long finish of excellent taste-olfactory correspondence.
