The Rum Caña Morada by Paranubes is a rum made from a single variety of sugar cane. This distillate originates in the mountain village of Río Tuero, in the Sierra Mazateca mountains, in northern Oaxaca. Producer José Luís Carrera decided to make a distillate using just one variety, the Morada variety. This, usually used in blends, gives the rum a lighter body and a drier profile. Through its warm and silky taste, the Rum Caña Morada from the Mexican producer Paranubes is able to satisfy the most experienced and demanding palates. This distillate, made from the fine variety of sugar cane called Caña Morada, represents the first rum of master distiller Jose Luis Carrera, third generation of Paranubes, produced from a single variety of sugar cane. In the Sierra Mazateca, territory of the state of Oaxaca where the Paranubes distillery operates, the rum is called “aguardiente de caña”, literally “cane distillate”.

The Paranubes Rum Caña Morada is produced from sugar cane of the Caña Morada variety, grown organically on fertile land excluding the use of synthetic chemical products. The plant is harvested at full ripeness and is then hand-pressed to extract the sugary juice contained within, which subsequently undergoes spontaneous alcoholic fermentation in wooden vats of pine for a period of about 48 hours. This is followed by the distillation of the fermented liquid in column copper stills, and the rum is finally bottled without any addition of water or additives.

The Rum Paranubes Caña Morada shows a transparent appearance with light amber hues. The intense olfactory profile carries with it tropical hints of coconut that meet intriguing aromas of cinnamon, cane sugar, and licorice, as well as subtle vegetal notes. Soft, round, and silky taste development, characterized by a long persistence on the sweet perceptions of the nose. To fully appreciate all its facets, this rum should be enjoyed neat at room temperature or slightly chilled, although it is also excellent for making classic or innovative cocktails.
