Etna Rosso 'Mofete' Palmento Costanzo 2022

The Etna Rosso "Mofete" from the Palmento Costanzo winery is a refined and elegant red wine produced on the northern slope of Mount Etna, in the Santo Spirito area of Passopisciaro. The "Mofete", named after the last gas emission from volcanic activity, is made from a blend of predominantly Nerello Mascalese and Nerello Cappuccio grapes. The vineyards, located between 680 and 750 meters above sea level with a northern exposure, are cultivated using the alberello system, supported by chestnut poles to protect against strong winds. The soils are mainly composed of black and brown volcanic sands, with stones and effusive rocks. The Palmento Costanzo winery, attentive to the values of tradition and quality, works to enhance the wines of the region by applying methods consistent with organic farming.

The "Mofete" Etna Rosso is produced with hand-harvested grapes in the second half of October, aiming to keep yields per plant low, which in this way can generate grapes of higher quality and concentration. The clusters, harvested in small crates, reach the winery where they are gently crushed and destemmed, then fermented on their own yeasts in stainless steel containers. Once the alcoholic fermentation is finished, the wine is racked and transferred half into steel containers and half into large barrels where it remains for aging for a period of 12 months, after which it is bottled and matured for an additional 12 months in the bottle before being ready to be consumed.

The Etna Rosso "Mofete" by Palmento Costanzo presents itself with a medium intensity ruby red color. On the nose, aromas of fresh red fruit appear, including cherry and currant, blackberry, floral notes of rose, spicy hints of black pepper and wild herbs that add to its uniqueness. On the palate, it is juicy, with good body, fresh and characterized by well-present tannins and a savory finish at the close of the sip.
