Primary tones of grapefruit, lime and white peach are complemented by more complex delicate notes of spices, vanilla and liquorice for a balanced and very pleasant taste
Contadi Castaldi's Franciacorta Pas Dosé "Zero" is a sparkling wine that represents the noble area that gives the appellation its name. The extraordinary vocation of the area means that excellent grapes are selected from different vineyards and that the different characteristics of the soil and climate combinations where they are located emerge.
Pinot Noir, which provides great structure and surprises, and Chardonnay, which gives unmistakable characteristics, freshness and balance, make up the cuvée of this extraordinary wine. After soft pressing and static cold decanting, the two grape varieties undergo separate alcoholic fermentation in steel containers; in the same containers, and partly in barriques, the must undergoes partial malolactic fermentation and rests on the lees for 7 months. In late spring, the blending and first bottling take place for the second fermentation in the bottle, according to the Metodo Classico. Franciacorta Pas Dosé "Zero" is aged sur lies for 42 to 46 months. This is followed by disgorging and further ageing in the bottle for 6 months. The sparkling wine has a straw yellow colour accompanied by a fine and persistent perlage. The nose reveals citrus sensations, floral fragrances, walnut, hazelnut and mineral notes. On the palate, it is taut and straightforward, enveloping the drinker with its fine bubbles, savoury, fresh and long finish.
