FRANCIACORTA PAS DOSÉ 'ZERO' CONTADI CASTALDI 2018 DESCRIPTION

Contadi Castaldi's Franciacorta Pas Dosé "Zero" is a sparkling wine that is a spokesman for the noble area that gives the appellation its name. The extraordinary vocation of the area means that excellent grapes are selected from different vineyards and that the different characteristics of the pedoclimatic combinations where they are located emerge.

The Pinot Noir, which gives great structure and surprises, and the Chardonnay, which gives unmistakable characteristics, freshness and balance, make up the cuvée of this extraordinary wine. After a soft pressing and cold static decantation, separate alcoholic fermentation of the two blends is started in steel containers; in the same containers and partly in barriques, the must will partially carry out malolactic fermentation and stay on the lees for 7 months. In late spring, blending takes place and the first bottling to allow refermentation in the bottle to take place, according to the Metodo Classico. Franciacorta Pas Dosé "Zero" matures sur lies from 36 to 40 months. This is followed by disgorgement and further bottle ageing for 6 months. To the eye, the sparkling wine is a deep straw yellow accompanied by a fine and persistent perlage. The nose has citrus sensations, floral fragrances, nutty, hazelnut and mineral notes. On the palate, it is taut, straight in its enveloping drinkability through fine bubbles, savoury, fresh and with a long finish.
