It ages for about 24 months in used barrels and expresses a balanced and highly elegant organoleptic profile, marked by notes of white peach, citrus, almonds, and lemon cream, with hints of iodine. On the palate, it is slightly buttery, with excellent freshness and broad salinity.
The Macon Village "Les Sardines" by Domaine Robert Denogent is born from a simple and traditional production approach, where human intervention is seen as something limited, if not exceptional. The Chardonnay grapes are therefore free to transfer into the bottle what is the fruit of their journey in the vineyard, where neither chemical fertilizers nor synthetic products are used. We are faced with a harmonious label, where the savory emphasis is the common element found during tasting, both on the nose and on the palate.
The "Les Sardines" Macon Village is made by Domaine Robert Denogent starting from Chardonnay grapes, cultivated in different parcels owned by the winery scattered throughout the Maconnais. The vines are on average all over forty years old, and grow in terroirs characterized by a common clay and limestone matrix. After pressing the grapes, the must ferments spontaneously, thanks to the presence of indigenous yeasts, in used oak barrels. The final aging phase lasts for 24 months, and takes place in non-new barrels. At the end of this period, the wine is ready to be bottled and put on the market.
This Macon Village "Les Sardines" Domaine Robert Denogent presents itself to the eye with a bright straw yellow color, characterized by some flashes that tend more towards gold. The fresh pulp of the fruit envelops the nose first, then highlighting more marine touches and hints of various aromatic herbs. On the palate, it is full-bodied, buttery, almost tactile in offering a material sip where the savory-mineral vein that guides the flow of drinking stands out. Its creaminess and salinity make it particularly suitable for pairing with flavorful seafood dishes such as preparations based on blue fish.
