Domaine de la Pepiere's Muscadet Sèvre et Maine 'Chateau Thebaud' comes from the westernmost part of the Loire. It is a wine from one of the area's most prized crus, famous for the 'granit de Château-Thébaud', granitic soils where the roots can grow very deep. The wine spends a good 30 months on the lees with frequent bâtonnage, a technique that gives body, complexity and finesse. The Muscadet Sèvre et Maine "Chateau-Thebaud" from Domaine de la Pepiere is an organic white wine that combines freshness and roundness, the result of a long maturation on the fine lees. Domaine de la Pepiere specialises in the Melon Blanc variety, also known as Melon de Bourgogne, which forms the basis of the Muscadet Sèvre et Maine appellation on the Atlantic side of the Loire Valley. The vineyards from which the grapes for this label come are located on the banks of the Maine, a tributary of the Loire, precisely in the area of Château-Thébaud, hence the name.
'Chateau-Thebaud' Domaine de la Pepiere Muscadet Sèvre et Maine is made from pure Melon de Bourgogne grapes grown in a certified organic system on granitic soils, characterised by a good clay and sand content. After manual harvesting, the grapes are subjected to soft pressing, with the must thus obtained undergoing spontaneous alcoholic fermentation in underground steel tanks. This is followed by a long ageing period of 30 months on fine lees, during which frequent batonnage is carried out to keep the yeasts in suspension and thus increase the aromatic complexity and body of the wine.
The 'Chateau-Thebaud' Muscadet Sèvre et Maine from Domaine de la Pepiere has a soft, bright straw yellow hue. The nose is fresh and fragrant in its sensations of green apple, pear, aniseed, fennel and liquorice, which meld with saline mineral memories on the finish. The palate reveals excellent balance between roundness and freshness, with a fine progression of great tension associated with a distinctly savoury finish. The producer himself recommends serving this Melon Blanc not too cold, in combination with various cheeses or seafood cuisine.
