The Riesling Spumante 'Zero' from Dr. Fischer - Hofstätter is a high quality dealcoloured wine. It is produced in the Saar, from Riesling Kabinett grapes, thus of a good sugar level. The production process involves placing the wine in a special apparatus in which the atmospheric pressure is so low that the boiling temperature is around 25-30 °C. Compared to other non-alcoholic sparkling wines, this Riesling by Dr. Fischer – Hofstätter maintains the qualities of a high-level sparkling wine, thanks also to the avant-garde de-alcoholization process to which the wine is subjected.
For the production of the Riesling Dr Fischer – Hofstätter ‘Alcohol Free Zero’, we start from the cultivation of Riesling grapes in the Moselle area, on the characteristic slate soils that distinguish the region. The grapes used are classified 100% as Kabinett, a category that identifies high-quality bunches harvested at full or slightly advanced ripeness. In the winery, these undergo a gentle pressing, followed by the alcoholic fermentation of the must in stainless steel tanks. Once ready, the wine is subjected to an innovative de-alcoholization process that consists of the physical, and not chemical, removal of alcohol using reduced atmospheric pressure, allowing ethanol to evaporate at a temperature of only 25-30 °C, thus not affecting the aromas and taste of the wine.
The Riesling ‘Alcohol Free Zero’ Spumante from the winery Dr. Fischer – Hofstätter presents a pale straw-yellow appearance with greenish reflections and fine bubbles. Typical aromatic sensations of white-fleshed fruits such as pear and apple characterize the olfactory context along with intense notes of lemon peel and delicate iodized mineral hints. On the palate, the good roundness and structure are accompanied by lively freshness and a pleasant mineral vein in a development very drinkable and enjoyable.
