Chateau Saint-Tropez, acquired by Roger Zannier, owner of the Portuguese estate Quinta do Pessegueiro, is a charming estate rich in ancient allure. Peace, calm, and carefree spirit dominate among the rows that blanket the gentle hills, intertwining with the plants of the Mediterranean scrub, descending towards the deep and clear blue sea of the Côte d'Azur. However, what Roger has always carried forward is that feeling of love and passion that has dominated these lands since ancient times, investing in innovation while preserving the ancient tradition of the place. Thus, he produces true juices of the territory, capable of concentrating all the romantic and Mediterranean atmospheres of Provence. “Maur & More” is born from a blend of Grenache (80%) and Cinsault (20%), two ancient local varieties that have dwelled in Provence for centuries. Both grapes come from vineyards close to the gulf, those nearest to the sea, and their roots sink into sandy and schist soils. Once the harvest is done, a soft pressing and a brief cold maceration of the pomace is carried out, a technique that allows for the achievement of rosé hues. The vinification, performed in the deep cellars of the winery, involves fermentation in steel at controlled temperature. The aging continues in steel tanks for several months, without using wooden barrels, thus preserving the fragrant and varietal aromas of the grapes.
