Poderi dal Nespoli's Spumante Metodo Classico 'Nove Bolle' rediscovers the art of sparkling wine-making from the early 1900s. It is a Blanc de Blancs from Trebbiano grapes, which spends 2 years in the bottle before the final bottling, which takes place without any 'dosage'. On the nose it offers intense floral scents, as well as fresh hints of pear and a rich finish with hints of pastry, typical of the sparkling process. The palate is elegant, fresh and balanced, a perfect companion for aperitifs and fish dishes
The Romagna Spumante Metodo Classico Brut Nature Blanc de Blancs 'Novebolle' represents a tribute to the territory by Poderi Dal Nespoli. In fact, this label picks up the tradition of sparkling wine making that animated Romagna winemaking in the early 20th century. On the other hand, the high acidity characteristic of Trebbiano grown in Romagna, combined with its tendentially neutral aromatic profile, makes this vine an ideal base for sparkling wine production.
The 'Novebolle' Poderi Dal Nespoli Romagna Spumante Metodo Classico Blanc de Blancs Brut Nature is a 100% Trebbiano from vineyards located on the hills of Romagna, rooted on soils rich in mature limestone clay. The grapes are harvested by hand between the end of August and the beginning of September, followed by soft pressing of the bunches. The must is then conveyed into stainless steel tanks, containers in which alcoholic fermentation takes place at a low temperature. During the spring following the harvest, the wine is then drawn into the bottle according to the Metodo Classico, with at least 24 months of ageing on the lees before disgorging, which is carried out à la glace, i.e. by freezing the yeast deposit on the neck of the bottle. Finally, the sparkling wine is not dosed.
On visual inspection, the Brut Nature 'Novebolle' Spumante Metodo Classico Blanc de Blancs from Poderi Dal Nespoli reveals a straw yellow colour with a fine and persistent effervescence. The nose evokes pleasant fruity and floral scents of apple, pear, chamomile, jasmine and lemon peel, enhanced by hints of pastry, dried fruit and bread crust on the finish. The palate is elegant and harmonious, with good structure and freshness, and a balanced finish that invites you to return to the glass.
