The Trento Pas Dosè Blanc de Blancs from Tenuta Maso Corno, located in the Lessini Mountains. This is a complex sparkling wine with a marked minerality, produced exclusively with Chardonnay grapes and aged on the lees for at least sixty months. One of the most complex Metodo Classico wines in the range, it expresses citrus aromas reminiscent of cedar, with hints of vanilla on the finish, an expression of fermentation in wood. The Blanc de Blancs Pas Dosé Spumante Trento of Tenuta Maso Corno represents a Trentino expression of Chardonnay in a Metodo Classico sparkling wine version that is characterised by its refined and crystalline personality. Chardonnay is by far the most widespread grape variety for the production of Trento DOC sparkling wines, and is particularly appreciated for its ability to convey the mineral-dolomitic identity of the territory. The vineyards of Tenuta Maso Corno are located in Ala, on the southern side of the Trento DOC production area, where the mitigating influence of Lake Garda is most pronounced, contributing year after year to the optimal ripening of the grapes.
Pas Dosé Tenuta Maso Corno Trento Spumante Blanc de Blancs is made from pure Chardonnay grapes cultivated at high altitudes on dolomitic-calcareous soils. The grapes are harvested by hand and carefully selected before undergoing soft pressing. The must thus obtained is vinified in French oak barrels, with complete malolactic fermentation, and the mass rests in oak for several months. The sparkling wine base is then bottled with the addition of the draught syrup for re-fermentation in the bottle according to the Metodo Classico, combined with at least 60 months of ageing on the lees. After disgorging, the sparkling wine is finally topped up with the same wine, thus excluding any dosage of sugar in search of maximum expressive purity.
Tenuta Maso Corno's Trento Spumante Blanc de Blancs Pas Dosé has a straw-yellow hue with golden highlights and fine, abundant effervescence. Fragrant aromas of citrus fruits such as lemon and citron present the olfactory range along with hints of resin and intriguing hints of vanilla and pastry. The taste reveals marked freshness, important structure and a pleasant savoury-mineral trail, all in a straightforward and refined progression of lasting persistence.
