Siro Merotto's small winery in the Veneto region is the protagonist of sincere and spontaneous expressions of the Glera grape, a white berry variety renowned for the production of Prosecco. The history of the estate began in 1960, when Giovanni Merotto and his son Siro decided to produce wine independently on the hills of Col San Martino, in the province of Treviso. Today it is Siro's son Nicola who continues the family tradition through the same genuine approach as his father and grandfather. The winery is a member of various winegrowers' associations such as 'FIVI', a federation that aims to promote the work of the independent winegrower who takes care of all stages of the production process, 'Col Fondo Agricolo', the highest quality expression of bottle-fermented Glera, without disgorging, and the 'Consorzio Conegliano Valdobbiadene DOCG'. In addition, thanks to photovoltaic panels, the winery is totally autonomous in terms of energy.
The 6 hectares of vineyards owned by the Siro Merotto estate are located on very steep hilly terrain, characterised by slopes of up to 45%. In these plots, with excellent southern exposure, Nicola Merotto mainly grows the Glera variety. Due to the steep slopes, agronomic operations such as pruning, mowing and harvesting must necessarily be carried out by hand. In the wine cellar, fermentation takes place in stainless steel tanks and the subsequent prise de mousse may take place in a low-temperature autoclave according to the Charmat Method or in the bottle according to the Ancestrale Method, depending on the label in question. Regardless of the technique adopted, all wines rest for long periods on the fine lees.
The Siro Merotto winery processes the Glera grape according to different styles: from the Valdobbiadene Prosecco Superiore 'Rive di Col San Martino' to the Frizzante Col Fondo Agricolo 'In Un Sol Bianco', via the Valdobbiadene Prosecco Superiore Extra Dry and Brut. These are wines with delicate floral aromatic tones, endowed with pleasant brio and vivacity.
