Located in the Canevino area, in the Oltrepò Pavese region, the Tenuta di Caseo - Tommasi production reality is committed to enhancing Pinot Nero in its sparkling version. The owners of the winery are the Tommasi family, one of Italy's most important wine families, who boast properties in Veneto, Tuscany, Umbria, Puglia, Basilicata, Sicily, and, precisely, Lombardy. The estate, dating back to the 13th century, includes woods and vineyards that grace the Alta Valle Versa, a territory located on the northeastern slope of the Oltrepò. The purchase of the estate by the Tommasi family dates back to 2014 and is the result of an ambitious project born from the family's passion for great sparkling wines.

The total hectares on which the Tenuta di Caseo - Tommasi reality is articulated amount to 120, of which 90 are dedicated to vineyards, focusing on the Chardonnay, Moscato, and above all, Pinot Nero varieties, the symbolic grape of Oltrepò Pavese sparkling wines. The rows grow on clayey soils characterized by the presence of active limestone, at altitudes ranging from 410 to 530 meters above sea level. Regarding the sparkling bases, the grapes are pressed very gently, and the subsequent fermentations take place in stainless steel tanks at controlled temperatures. After a few months of rest, the base wine is then subjected to the tirage operation according to two techniques: the Charmat Method and the Classic Method. The first involves a second fermentation in large autoclaves and produces fresher and more immediate wines, while the second technique consists of a slow refermentation in the bottle associated with long aging on the lees, resulting in more complex sparkling wines. Finally, the still version of Pinot Nero is vinified in oak barrels, in a full Burgundian style.

The extensive production of the Tenuta di Caseo - Tommasi reality includes sparkling wines and still wines characterized by balance and stylistic precision. Focusing on the Classic Method, the flagship of the winery, these wines are dosed rather low in order to highlight the character of the grape and the territory.
